Peach and Raspberry crumble

Serves 3 ~ 4


Ingredients:
400gm of fruits at your own choice but I personally preferred canned peach(sweet) and frozen raspberry(sour). If you can’t find fresh/frozen raspberry you may replace with fresh strawberry.


75gm Unsalted butter.


60gm brown sugar


Optional:


Almond nuts chopped


Directions:


Preheat oven to 180°C.


‘Blitz all crumble……..breadcrumbs’ and follow below method.


Place flour in a large clean bowl. Make sure the bowl is dry. Cut butter into block sizes and place them into the flour. Coat the butter with flour and cut them into smaller pieces. Use your finger tips to rub the cut butter with the flour till like breadcrumbs. DON’T have to be fine breadcrumbs texture, as long as most butter is blended in. DO NOT KNEAD! After crumble is done, you may add in some almond nuts. Don’t have to mix in well just stir in the nuts casually will do.


Set the crumble a side, covered with cling flim to prevent the butter to melt OR put it in the fridge while preparing the fruits in dish.



Place raspberries and peach into the bakeware (make sure it's oven safe) and sprinkle the sugar over them.


Bury them with the crumble....

Bake 25 to 30 minutes in the
preheated oven, until golden brown.



Let it cool for 5~10 mins before serve...

Salmon Don

Ingredients Serves 4:



4 fillets of salmon (with or without skin)
1 tbsp of salt
3 eggs
1 tbsp of light soya sauce
1/2 cup of water
1/2 tsp of seasame oil
1 tbsp of sake (or white wine)



Directions:
  1. Preheat oven 220°C for 10mins.
  2. Sprinkle the salt onto salmon and make sure it's even covered. Keep the salmon in an air-tight container and chill for 5minutes.
  3. Beat eggs with light soya sauce, water, seasame oil and sake till combine. Steam for 10 - 13 minutes.
  4. Prepare salmon into skewers and place it onto roasting tray (tray for dripping purpose) and bake/grill for 20 - 25 minutes.

  5. Prepare your Don (rice as per individual preference) and topped with portion of steam egg and salmon. Sprinkle ground black pepper and serve.

No bake cheese cake



Ingredients Serves 9:


Biscuit crumb base

120 g finely ground digiestive biscuits crumbs
50 g butter
40 g white/brown sugar


Cream cheese

1 block Kraft philadelphia cream cheese
75 g white sugar
35 ml lemon juice
1/2 tsp vanilla extract
85 g sliced fresh strawberries

Directions:
  1. In a clean dry bowl, mix together crushed biscuits crumbs with butter and sugar.
  2. Press into a pan/container. Place in refrigerator until ready for use.
  3. In another bowl, beat cream cheese, sugar and lemon juice till combine.
  4. Spread into pan/container prepared earlier.
  5. Top with sliced strawberries. Freeze for 1 hour, covered with foil.
    Place in refrigerator 30 minutes before serving.
